Abstract

This work aims at presenting a method of determination of color in sugared products that guarantees the exactness of its results as well as its practical application in all the stages of the process of production of sugar permitting to be able to establish a control system that guarantee the production of sugar within the parameters of quality established. In the work it is demonstrated that the main validation parameters, as linearity, specificity, precision and accuracy, they fulfill the established requirements for this type of method under the selected conditions. The results permit defining with his application the typical behaviors of the color in each stage of the process and therefore its dynamics.
