The convenience of a high relative velocity between crystal and solution in pans and crystallizers to obtain higher exhaustation in smaller times is discussed in this paper. The evaluation of a new vertical crystallizer model with 1m3 of capacity is presented. Cooling kinetic and heat transfer coefficients are shown. Comparison with the results obtained in a conventional crystallizer shows that for the prototype, the purity values for exhaust molasses are smaller than for the conventional crystallizer and the crystallizing time is smaller also.
