Abstract

Introduction:
In beer pasteurization process simulation, is not common to consider container thickness. To obviate this is valid for canned beer case, but when beer is bottled this consideration is not correct.
Objective:
To study glass heating and cooling during bottled beer pasteurization process, using COMSOL MULTIPHISICS v 5.1 simulation software, based on finite element method
Materials and Methods:
The system to be modeled is formed by bottle containing the beer to be pasteurized, which transits through tunnel areas, and water that is supplied through the showers arranged in each zone for this purpose. Model is based on energy balance for a solid in a non-stationary state.
Results and Discussion:
Temperature changes are presented during glass heating and cooling. The required times to material take heating agent (water) temperature, in each case, are analyzed.
Conclusions:
Realized study indicates the need to consider a time during heating and cooling. The results demonstrate that this type of analysis should not be omitted in similar processes.
