Abstract

Exhaustion process is evaluated during a harvest at Héctor Molina agro industrial complex. Quality parameters of the raw material, that affect exhaustion are presented, such as rubbers (21,4%) and total acidity of the mixed juice (0,159), as well as the effect of the relationship inverted sugars/ashes and content of ashes in the exhaustion. Results obtained to characterize the production process of commercial and exhausted massecuites, evaluating the fall of purity in each stage. The relationship is presented among the crystal yield and the purity of the massecuite and of its molasses.
